A Word From The Organizers About The Speed Of Food Service This Year.
We do acknowledge we had a major problem with our catering and the speed of food service last year. We know it is a very important part of our events. It was more an embarrassment for us than disappointment to many of you perhaps. We apologize for your unfavorable experience having to wait a long time in line to get your food last year.
We have been having perpetual challenges in the catering component of our events in the past. Foible and other unpredictable factors also played their fare share of the unexpected. For example, one of our painful bottlenecks was the slow burning charcoal we used last year. It added an extra four minutes for a skewer of kabab to cook. Some years we did well and some years we had weakness in the flow of service like last year. But, we have never had any problems with the quality of food we serve at our events.
This year, we have analyzed and have reconfigured the way we prepare, cook and serve the food at our event tomorrow (Chahar Shanbeh Soori). We are certain we can and will serve over a thousand plates a lot faster without compromising quality. Many things will be prepared in advance such as having all kababs skewered (seekh zadeh) and ready before the event starts. About 1200 skewered and ready. The caterer will get an update from the rangers standing at the Park's entrance gate every ten cars that enter the park, so they can be ready ahead of time. There are many smaller but effective improvements as well. We anticipate that our food service will be a success this year and an operation model for our future events too.
I hope you will accept our apology and our explanation. We have made all the effort to correct and improve the speed of the food service this year.
We look forward to seeing you all tomorrow night. Please bring friends and share the experience with them.
Thank you. www.iPersian.org
